Terroir
In Provençal, “Camp-Revès” means “field on the other side”. This is the name of the estate's best plots, around 8 hectares at the top of a hillside perfectly exposed to sun and wind, east of Avignon. Planted on particularly thick clay-limestone soil, the vines draw their vital substances from deep in the soil. The large rounded pebbles store up the sun's heat and help the grapes ripen perfectly, warming and purifying the vines. The Mistral wind keeps the grapes healthy with the minimum of intervention, in accordance with the “high environmental quality” standard (HVE 3).
Winemaking
The white grapes are harvested at dawn, before the sun hits too hard, to keep the bunches fresh. Pressing follows immediately to avoid astringency. Alcoholic fermentation takes place at low temperature to extract the finest tannins. The absence of malolactic fermentation preserves the primary aromas and freshness. Approximately 20% of the wine is aged in casks for greater roundness.
