Story

The wine
Canteperdrix is a district of the town of Mazan particularly gamey where partridges were accustomed to regroup.
After the harvest, the birds pecked the grains left on the stem where a fermentation could begin. This rather special consumption resulted in partridges singing more than usual.
In 2009, we decided to associate this name to different selections: Tradition, Prestige, Viognier, Merlot, creating the "Canteperdrix" range.
Vinification
The grapes are pressed as soon as they arrive at the cellar. Fermentation takes place at low temperature (14 ° / 15 ° C) for about 20 days.
