Canteperdrix Rosé

The wine
Canteperdrix is a district of the town of Mazan particularly gamey where partridges were accustomed to regroup.
After the harvest, the birds pecked the grains left on the stem where a fermentation could begin. This rather special consumption resulted in partridges singing more than usual.
In 2009, we decided to associate this name to different selections: Tradition, Prestige, Viognier, Merlot, creating the "Canteperdrix" range.
Clay and limestone
Partial maceration of the juice with the grape skin. The fermentation proceeds at a temperature of 16 ° for about 20 days.
