Presentation

The wine
Canteperdrix is a district of the town of Mazan particularly gamey where partridges were accustomed to regroup.
After the harvest, the birds pecked the grains left on the stem where a fermentation could begin. This rather special consumption resulted in partridges singing more than usual.
In 2009, we decided to associate this name to different selections: Tradition, Prestige, Viognier, Merlot, creating the "Canteperdrix" range.
Vinification
The grapes are pressed immediately after harvest. The fermentation proceeds at low temperatures (14 ° / 15 °) for about 20 days.

Serving
To be served at 11/12°C
Tasting notes
Golden color with green hints. Nose on pear and white flowers. Full and velvety in mouth, with grapefruit aromas, and salty notes in the final.
Food pairing
Fish, white meat, appetizer.
